Finger Lakes Winery Rock Stream Vineyards Launches “Secs Appeal,” A New Sparkling Wine Celebrating Native & Hybrid Grapes

Rock Stream Vineyards, one of the Finger Lakes region’s innovative wineries, has announced the release of its new sparkling wine, “Secs Appeal,” a vibrant and aromatic sparkling blend crafted from Niagara and Cayuga grapes. The new release reflects its continued commitment to producing distinctive Finger Lakes wines that embrace both native and hybrid grape varieties while delivering approachable, flavorful wines consumers can enjoy year-round.

Owner and winemaker Dr. Mark Karasz said the inspiration for the wine came from his long appreciation for Niagara grapes and the popularity of the winery’s Dry Niagara wine among visitors to the tasting room. “Many people think of Native grape varieties as lesser grapes but I’ve always been a fan of Niagara and I’ve made a Dry Niagara for many years. Since it is a best seller at my winery, I decided to make a Sparkling wine from Niagara and Cayuga and it is so aromatic, balanced, well-structured, and flavorful, and I think it really shows off the elegant wines that these grapes can produce,” Karasz said.

Over the years, he has become well known throughout the Finger Lakes region for his enthusiasm for unique wines, hospitality, and hands-on involvement in both vineyard and cellar operations. The winery’s approachable atmosphere and diverse Wine & Spirits lineup have helped establish Rock Stream Vineyards as a destination for visitors seeking innovative offerings. Rock Stream Vineyards produces a broad portfolio of wines ranging from traditional vinifera varieties to native and hybrid grape wines and creative blends, as well as innovative Spirits. Located on the western side of Seneca Lake in the Finger Lakes wine region, the winery has become known for combining old-world winemaking traditions with an adventurous approach to lesser-utilized grape varieties and wine styles.

With growing consumer interest in sparkling wines and unique regional wine styles, Rock Stream Vineyards believes “Secs Appeal” will appeal to both longtime Finger Lakes wine enthusiasts and newer wine consumers looking for refreshing, fruit-forward sparkling wines with character and balance. The winery says the release also highlights the continued potential of native and hybrid grape varieties within the evolving Finger Lakes wine industry. The name “Secs Appeal” is a take on the wine term “Sec” which refers to medium-dry sparkling wines.

Whiskey Flavored Brandy

This distinctive grape brandy artfully blends the smooth, fruit forward warmth of distilled wine with the rich, oaky depth reminiscent of Bourbon. Notes of vanilla, caramel, and toasted oak unfold alongside subtle dried fruit, creating a spirit that is layered, balanced, and refined. Enjoy it neat, over ice, or as the foundation of a craft cocktail. 

Chocolate Cream

Derived from pot-distilled wine, this indulgent cream liqueur offers luscious chocolate character complemented by delicate aromatics and soft hints of caramel and vanilla. Silky and inviting, it’s perfect as an after-dinner treat, in dessert-inspired cocktails, or simply poured over ice. 

SpEciality Release: Grüner Veltliner & gewürztraminer

At Rock Stream Vineyards, we take pride in crafting distinctive dry wines that reflect the character and climate of the Finger Lakes. Each varietal is thoughtfully produced in small batches to showcase structure, balance, and the natural expression of the grape. These specialty selections represent the true essence of Rock Stream’s craftsmanship.

Grüner Veltliner (2024)

Originally Austria’s signature white grape, Grüner Veltliner found its way to the Finger Lakes in the early 2000s and continues to thrive in cool-climate soils. Our 2024 vintage offers delicate citrus notes, a refined minerality, and a subtle touch of sweetness that brings freshness and vibrancy to every sip. Released December 21,2025.

Gewürztraminer (2024)

With origins tracing back to the northern Italian town of Tramin, Gewürztraminer is celebrated for its expressive aromatics. Our 2024 vintage reveals enticing notes of spice layered with lychee, pineapple, and bright citrus. Elegant yet aromatic, this wine captures both delicacy and depth. Released August 15, 2025.

November 20, 2024 – Dechaunac Returns (2020 Vintage)

Our DeChaunac is back – a distinguished French-American hybrid celebrated for its depth and character. This full-bodied red reveals layered notes of dark chocolate, ripe plum, and black cherry, woven together with subtle hints of vanilla. Structured yet smooth, the 2020 vintage showcases both richness and balance, reflecting a beautifully developed expression of this unique varietal. An ideal companion to robust cuisine or intimate gatherings, DeChaunac brings warmth and elegance to the table.
